Caramelized Apple Crepes w/ Crepini

I was at a Central Market event and discovered the most delicious crepes by Crepini.  Ever since my time abroad in France, I have craved crepes.  My friends and I went every day, yes EVERY day, to the little hole-in-the-wall around the corner from our apartment.  The sweetest man always knew that I wanted mine “bien cuit”, literally meaning well-cooked.  I still dream of that fresh and crispy crepe.

I digress.  These Crepini crepes filled my crepe-void and then some.  Crepini crepes are a mix between the French crepe and the Russian blini (a Russian pancake), hence Crep-ini.  The crepes are a bit savory, a bit sweet, and so light!  I could eat way too many.

I first had the Braised Cabbage Blini and hollllly moly. I was in heaven.  I went back to that stand multiple times and they probably thought I was crazy.

Did I mention that these crepes are made from a BUTTER FREE batter?  (I can hear the French scoffing at me already.)  But they still taste amazing!  Plus, they are made with all natural ingredients.

When I returned home, I was determined to find those crepes.  I found them in Central Market and was amazed to see the array.  They have cheesy crepes, fruit crepes, Russian crepes, sweet crepes, and savory crepes.  I took packs of Portobello Parmesan and Smoked Salmon crepes and they were also delicious.  They also sell ‘naked crepes’ which leave some room for creativity.

Crepini Naked Crepes

I picked up a pack of naked crepes and went to town.  I had some friends over and made some savory egg crepes, sweet strawberry crepes and my favorite, caramelized apple crepes.  Here are some yummy ways to try Crepini crepes out!

Egg White Crepes (serves 4)

  • 10 egg whites + 2 yolks
  • 2 handfuls spinach
  • 1/2 chopped onion
  • 4 naked Crepini crepes
  1. Whisk the egg whites and 2 egg yolks together.
  2. In a pan, heat a drizzle of olive oil and sautee the chopped onions.  Add the spinach and wilt.
  3. Add the egg yolks and cook to desired texture.
  4. While eggs are cooking, neat skillet and heat crepes, about 10-15 seconds per side
  5. Wrap egg scramble into crepes and enjoy!

Strawberry and Greek Yogurt Crepes

  • 1 cup Fage Greek Yogurt
  • 2 tsp. Wholesome Sweeteners honey
  • 2 cups halved strawberries
  • 4 naked Crepini crepes
  • Powdered sugar
  • Chocolate chips (optional)
  1. Mix Fage with honey.
  2. Heat skillet and heat crepes, about 10-15 seconds per side.
  3. Stuff crepes with stuffed strawberries and sweetened yogurt.
  4. Top with powdered sugar (and add some melted chocolate chips if you like!)

Caramelized Apple Crepes

  • 2 large Fuji apples
  • 2 Tbsp. brown sugar
  • 1 Tbsp. cinnamon
  • 2 tsp. lemon juice
  • 4 naked Crepini crepes
  1. Chop apples into thin slices or chunks.
  2. Mix with brown sugar, cinnamon and lemon juice.
  3. Let mixture sit for about 15 minutes for the juices to set.
  4. Heat a skillet and sauté mixture for about 8-10 minutes, stirring frequently.  The apples will start to tenderize and juice will start to thicken.
  5. Heat crepes and fill with caramelized apple filling and top with powdered sugar.

You can get packs of naked crepes or the pre-made ones.  They make for easy and tasty appetizers, hors d’oeuvres or snacks.  Order online or find them in your local market!
