Steamed Cod with garlic and fennel

Steamed Cod with roasted fennel and garlic-- a healthy, pescatarian and protein-packed meal!

Ingredients

  • 1 cup brown rice
  • 4 oz. cod
  • 1 fennel bulb
  • 2 cloves garlic chopped
  • 1 cup broccoli florets

Instructions

  • Rinse brown rice and add water amount according to package directions. Start to cook.
  • Chop fennel and roast at 400 degrees for 25 minutes.
  • Place roasted fennel at the base of the basket.
  • Place cod on fennel, and top with chopped garlic.
  • Place broccoli florets in basket.
  • When rice has only 8 more minutes to cook, place basket in rice cooker.
  • Allow to steam for 6-8 minutes, or until fish is cooked through.
