Spinach Egg White Quiche with Brown Rice Crust

This quiche is a great breakfast idea- simple and delicious.  I am only cooking for myself, so since it made a whole pie, I saved the leftovers and packed it for work for the week!  It was a great breakfast and snack, and I’m sure kids would love this fun “pie” breakfast.

First, I had a lot of leftover brown rice and wanted to do something different with it.  I discovered all these “brown rice crust” recipes for pies, quiches, etc.  From reviews, people loved the crust, so I gave it a shot.

What you’ll need:
2 cups cooked brown rice
1 egg

Directions:
Simply mix the egg with the brown rice

Press the rice into a the dish  (I used  9in dish).  Add a dash of salt and pepper.

Cook for 10 minutes at 350 degrees

While the crust is cooking, combine the ingredients for the quiche.

Spinach Egg White Quiche

  • 2 handfuls of spinach
  • 1/2 onion
  • 1 egg
  • 2 egg whites
  • 3/4 cup yogurt  (I used non-fat plain Fage)
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions
Sautee the onions until browned and add the spinach until wilted

In a separate bowl, combine the egg, egg whites, yogurt, salt and pepper

Add the spinach and onions to the bowl

Pour into pie crust

I sprinkled a little more spinach and mushrooms on top

Bake for 25 minutes at 375 degrees.  Take out and enjoy!

Yum!!!  This was great.  The brown rice crust got deliciously crispy along the edges and was a perfectly compliment to the quiche filling.

The best way to start the day off, nutritionally, is with a hearty breakfast complete with whole grains and protein.  From the rice, I got my morning whole grains.  From the yogurt and eggs/egg whites, I got my morning protein.    Give it a try! Maybe for Meatless Monday!

Cook Time: 25 minutes

Ingredients (6 servings)

    I love to eat quiches but never saw this method to make it i usually use to make cup quiches or some times salmmon quinao quiches but now will must this one!
