This is my new waffle recipe, from now until forever. I was inspired by Green Lite Bites’ pancake recipe to make these. I wanted to make waffles, so I looked at a few of her waffle recipes to see the difference in the batters. There wasn’t much of a difference except the waffle recipes had a little more sugar or maple syrup. I took her pancake recipe and added a little more sugar to get these delightfully grainy, hearty and nutty waffles.
Oatmeal Almond Waffles
Makes 3- 5×5 in waffles
- 1 cup Old Fashioned Oatmeal
- ¼ cup dry roasted unsalted almonds (Trader Joe’s preferably)
- 1 tsp cinnamon
- ½ tsp baking soda
- ½ tsp baking powder
- 1 ripe banana
- 1 egg
- 1 tsp. vanilla extract
- ½ c Soy milk light (unflavored)
- ½ tsp agave nectar
Directions
In a food processor or blender, blend the oatmeal and almonds until it becomes a powder.
Mix in the cinnamon, baking powder and baking soda
In a separate bowl, mash the banana and mix in the egg, vanilla and milk.
Fold the wet ingredients with the dry until the dry ingredients are combined.
Pour the batter onto a waffle iron, and let it sit for 2 minutes, or until a fork easily removes the waffle.
Oh, I loooooove these waffles. By using oatmeal and almonds instead of white flour, they make for a whole grain, nutritious breakfast. Plus there is no butter, no added sugar and only one egg.
I know they seem almost too healthy to be good, but they were plenty sweet and moist from the banana and agave. And the nutty-ness from the almonds… yum!!! These healthy things even got the approval of my dad and brother. They won’t disappoint!

January 17, 2017 at 8:33 amHi Marsha! Thank you for your compliments! For Kodiak Cake waffles, I just use 1 cup mix + 1 cup cold water + 1 tbsp vegetable oil. The oil helps make it extra crisp and it doesn’t stick to the iron as much. I also give my iron a quick spritz with coconut oil. Let me know if you have any other questions! (And this oatmeal almond recipe is also very good!)
