Did you know you could make all sorts of goodies with pancake mix? (Besides pancakes, that is!)
I had no idea. I mean, I knew I could make waffles, but did you know you could make COBBLER?! Well, I made a Peach Cobbler with Kerbey Lane Cafe’s Apple Cinnamon pancake mix and it was UHHH.MAZING.
And because they have a gluten-free Apple Cinnamon mix, this cobbler is completely gluten-free!
This gluten-free peach cobbler came about because I received a challenge from Kerbey Lane Cafe to make a creative recipe using their pancake mix.
(For those of you not familiar, Kerbey Lane Cafe is an Austin staple. They serve quality homemade food, have breakfast 24 hours, and use the best local ingredients.) Kerbey brunch and Kerbey late night are musts.
This task was definitely a challenge for me– I also made Lemon Poppyseed Scones which were really good, but the cobbler definitely won.
Because I’m not the world’s best baker, I tried a few different variations of the cobbler, but I found the one. Yes, this is the one. Let’s put a ring on it.
I made these in 4 ramekins and I also made some in an 8×8 pan. Both were delicious, but these ramekins were a bit prettier ;)
I felt quite southern making this Peach Cobbler. It’s a very popular dessert here, but I have to admit, I ate these for breakfast two days in a row!
My boyfriend devoured about 7/8 of the pan the first morning. Yes, like the whole pan… the FIRST morning. I kid you not. Therefore, I had to label my portion to make sure he didn’t eat it! Like a little kid, I swear…
I topped the cobbler with some extra fresh peaches and a touch of coconut based ice cream. Because… hashtag YOLO.
Make sure you don’t overcook them, but cook them long enough for the peaches to sizzle. And if you don’t have Kerbey Lane mix, any pancake mix will do. You will LOVE this!
Gluten-Free Peach Cobbler with Kerbey Lane Pancake Mix
Ingredients
- 4 medium Organic Peaches
- 1 1/4 cup Kerbey Lane GF Apple Cinnamon Pancake Mix or regular pancake mix
- 1 cup Rolled Oats
- 1/4 cup Brown Sugar
- 3/4 cup Almond Milk
- 1 T. Coconut Oil
- 1/2 cup Roasted Almonds/Pecans chopped
- 2 tsp. Cinnamon
Instructions
- Slice peaches and layer into ramekins or 8x8 pan. Fill at least half way up the pan/ramekin.
- Combine pancake mix, oats, brown sugar, almond milk, coconut oil, almonds and cinnamon in a bowl.
- Pour mixture over peaches.
- Bake at 375 for 15-20 minutes (ramekins) or 30 minutes (8x8 pan).
- Top with fresh peaches and ice cream. Serve warm!
