I am so excited for this post because 1. this tomato, cucumber, and mint salad is delicious and 2. (!!!) because this is the first post with the updated design!
One of my best friends over at Boss Sauce created this beautiful design and I absolutely LOVE it. I am seriously overflowing with excitement to show off her work here. To have The Fresh Find creatively designed by one of my best friends makes it so much more meaningful. And please bear with us while we work out the minor kinks :)

Onto the salad… I made this simple salad and I loved it so much that I made a big batch the next day, and continued to eat it all week. I used fresh veggies, mint from my garden, and a dash of olive oil and red wine vinegar. That’s it!
I am positive there will be future versions of the salad with slight alterations of vinegars and herbs. I envision lemon, orange, dill, basil…
In order to prevent a goopy salad, make sure you de-seed the cucumbers and tomatoes.
Simply cut the cucumber in half (hamburger style), and then cut each half in half (hot-dog style). Using a spoon, scoop out the seeds. For the tomatoes, cut the tomato in half (hot-dog style) and scoop out with a spoon!
These de-seeded cucumbers and tomatoes create a fresh and crisp salad. Now toss with some onions, mint and avocado, and add some olive oil and vinegar. Enjoy!
Tomato, Cucumber and Mint Salad
Ingredients
- 2 medium cucumbers
- 3 roma tomatoes
- 1/2 small onion
- 1/2 medium avocado
- 1 handful of mint
- 1 tbsp olive oil
- 2 tbsp red wine vinegar
Instructions
- De-seed cucumbers and tomatoes
- Chop cucumbers, tomatoes and onion
- Dice mint
- Toss cucumbers, tomatoes, onion, avocado, mint, olive oil and vinegar
- Keep chilled in refrigerator until served.
