I had my next class with Cooking up Cultures and it was Empanada Day!!! We made everything, even down to the dough!
This was definitely a tougher recipe, but it was so much fun. A few of us prepared the stuffing which was made con carne, cebollas, cumino, sal, y pimienta. (Eh? See how mi Espanol is improving?) Also, instead of using lard or shortening, we used coconut oil, which was much much much healthier.
While the meat was cooking, my classmates prepared the dough using harina y huevos. Kat taught us how to knead out the dough and make it the correct texture. We flattened out our own pieces and made into perfect circles.
We then stuffed it with the meat, hard boiled eggs, olives and raisins.
Using the whites of the eggs, we sealed off our empanadas and brushed them with egg yolks (which gives them a golden color).
The empanadas were pretty good but I would preferred the insides to be with chicken, spinach and beans. Also, I added agave on top of the empanada to make it a little sweet. I recommend brushing them with honey or agave :)
I’ve been having so much fun so far! My Spanish is still in progress, but the immersion helps so much!
