Wow. I just made one of the BEST things I have ever made. I roasted eggplant and made eggplant caprese. Wow. The eggplant infused my apartment with such an incredible aroma and I couldn’t get enough of it.
Why eggplant?
- In one cup of cooked eggplant, you get 2g of fiber, 0g of fat, 3g of sugar, and only 33 calories.
- Good source of vitamin A, B- vitamins, and minerals
- Nasunin helps prevent damage of cell membranes and blocks the creation of free radicals
- Potassium brings a balance in salt levels and maintains hydration. It also helps regulate blood pressure
I have had a great time experimenting with eggplant and I am growing to really, really love it. This was so simple, healthy and delicious… making it a perfect appetizer! All I did was cut the eggplant, brush it with olive oil, roast for about 40 minutes, and layer with tomatoes, basil and top with balsamic vinegar!
Eggplant Caprese
- 1 Eggplant
- 2 roma tomatoes
- Basil
- Balsamic Vinegar
- Mozzarella Cheese
- Salt and Pepper
Directions
Cut eggplant into slices
Brush with olive oil, salt and pepper as desired
Roast for about 40 minutes
