I discovered Green Vegetarian Cuisine in San Antonio just a few weeks ago and I wish I knew about it earlier.  It is the only vegetarian and kosher restaurant in the area.  A lot of their food options are clean, high in fiber, high in protein and with loads of veggies.  I love it.
Not only is their food healthy, but they are eco-friendly with their energy efficient building, recycling bins and biodegradable packaging.  I highly recommend making a stop here!  Here are my favorites:
Green Vegetarian
Protein Salad – Kale salad, fresh spinach, chickpeas, quinoa tabouli, flaxseed, raw pecan hummus, carrots, tomato, avocado, and roasted tofu
Green Vegetarian
Macrobiotic Bowl – Quinoa tabouli, beans, kale, sauerkraut, seaweed, and steamed broccoli.
Green Vegetarian
Mediterranean Bowl – Quinoa tabouli, baba ganoosh, tzatziki, black olives, falafel patties, cucumbers, tomato, carrots, dolmas, and raw pecan hummus

What I loved most was their Kale Salad.  The tender greens have both a sweet and spicy kick and it is unbelievable.  With some research, I was able to hunt down the recipe.

I made a big batch of this salad with my over-sized bag of kale from Costco and it turned out great!  The dressing is cooked over the stove and when you pour it over the kale, the kale slightly wilts.  You can eat it warm, or you can place it in the refrigerator and eat it chilled later.  Both ways are equally yummy.

I made about half the bag in my first batch, and throughout the week, finished the entire bag, using this recipe.  I’m surprised I didn’t turn into a kale leaf!  Here’s how to make it…

Green’s Kale Salad

  • 2 bunches of Kale
  • 1/4 c. Apple Cider Vinegar
  • 2 T. Olive Oil
  • 1/4 c. packed Brown Sugar
  • 2 cloves Garlic
  • 2 T. Soy Sauce
  • 1 tsp. red pepper flakes
  • Sesame Seeds
  • Green Onions, other vegetables (optional)

Directions:
Combine all dressing ingredients in a small pot and heat until sugar is dissolved
Pour over kale and toss with other vegetables if desired

Let sit for 10 minutes for the flavors to absorb and enjoy!  (Or chill and eat later)
 Next, I have to make their amazing quinoa tabouli!

Ingredients

  • 2 bunches of Kale

Instructions

Combine all dressing ingredients in a small pot and heat until sugar is dissolved

    Do you also have the recipe for the quinoa tabouli, the raw pecan hummus, and the roasted tofu? I ate at Green Restaurant and this salad was wonderful!

      I know it’s GREAT right? I don’t have those recipes, but I love them and will search for some. I’ve wanted to make the quinoa tabouli so bad… it’s incredible. I will let you know. Thanks for reading Michelle!
