Happy Meatless Monday! How was your weekend?
I survived the 106 degree heat this weekend, mostly because I was in yoga all weekend. As some of you know, I started teacher training with CorePower Yoga two weeks ago. It is a pretty big commitment, but I am so glad I am doing it. I have learned so much already, I can’t wait to see what else is ahead.
I feel like I’m back in school again and I love it! I love what I am learning, studying and even loving the homework. We are reading this book, Journey into Power Yoga by Baron Baptiste. I laugh at the cover every time I see it. Haha he’s so intense, it’s awesome.
Anyway, one of my favorite things I read was about “the edge”.
“The edge is where we come right up against ourselves and what we can do and be. It is the boundary between where we are and where we grow… Your instinct may say ‘this hurts… I can’t do it… I’m done’. That is precisely when you have the chance for a breakthrough. That is the moment of truth, when you can transcend your boundaries and grow”.
That resonated so well with me. So few times we push ourselves to the limits. People need personal trainers and coaches to push their limits. When really, you can saved hundreds of dollars by overcoming your mind and physically pushing through and thus, growing.
I’ve heard this phrase countless times,
“The pose doesn’t really start until you want it to end“.
I love it. Tough love, kids.
Yoga isn’t about just going through the motions. You have to push yourself not just with your body but also your words and thoughts. In one class this weekend, I wanted to get to the edge in every pose. I can’t say I did that with every pose, but I kept coming back to it and focusing on all the muscles working in each pose. It was a horribly sweaty (but amazing) experience and I was even more exhausted than I usually am.
Anyway, after about 12 hours of yoga talk and practice, I’m all loopy and quite hungry. Last week, I made these quinoa patties (adopted from SkinnyTaste) and have had leftovers to take to yoga and also devour after.
They are so much lighter than meat patties so I am actually awake and energized. They are perfect for meals, snacks and even breakfast!
Prepare the patties as stated in the recipe below, and form patties like these.
After cooking on both sides, you can top with mango, avocado, Greek yogurt, or sour cream…
Or add a side of sweet potatoes ‘un-fries’ (baked!)
And of course, enjoy with a glass of wine!

Quinoa Spinach Patties

Prep Time: 20 minutes
Cook Time: 15 minutes
Ingredients (10 patties)
- 1 cup uncooked quinoa
- 2 cups water
- 3 eggs, whisked
- 5 large scallions, sliced thin
- 3 cloves garlic, minced
- 1/2 teaspoon kosher salt
- 1/2 tsp cayenne papper
- 1 cup steamed spinach, chopped (frozen is fine)
- 1 cup plain gluten-free breadcrumbs (if want to make gf)
- 1 teaspoon coconut oil
Instructions
Cook the 1 cup quinoa with 2 cups water, according to directions.
In a large bowl, combine the cooked quinoa, eggs, scallions, garlic, salt, cayenne steamed spinach, and breadcrumbs. Let everything sit for a few minutes to absorb the liquid. The batter should be sticky.
Form patties (3-4 in diameter).
Heat the coconut oil and pan-fry each side until cooked through and browned (5-8 minutes).
Serve and top with avocado, mango, Greek Yogurt, sour cream or whatever your heart desires!
