It’s probably that burnt, charred taste that I love.  Mmmmmm… carcinogens!  I know, it’s not good to eat burnt things, but I love it!  At least I don’t eat it all that often.

Anyway, summer is officially here and it’s also peach season!  Luckily Summer hasn’t been too awful in Texas.  It was pretty hot last week, but this week it has been in the 90’s and beautiful!  I love hot Summer nights.  Unfortunately, it’s usually too hot (even at night) for my friends and they want to sit in the AC!  I just don’t understand, but I make sure give them a hard time about it :)

This summer peach salad is perfect.  You won’t have to heat up your house by cooking, and this light but satiating salad will keep you in summer shape.

You don’t need much.  Just grab some peaches, greens, goat cheese, avocado and balsamic glaze!  The tangy goat cheese combined with the sweet peaches and balsamic are phenomenal.  Top it with some mixed greens, arugula and avocado and you’ve got yourself one hell of a bite.

Grilled Peach Balsamic Salad

Prep Time: 10 minutes

Cook Time: 10 minutes

Ingredients (3 salads)

  • 6 peaches, pitted and halved
  • Olive oil
  • 3 cups mixed greens
  • 1 handful basil, chopped roughly
  • 1 avocado
  • 6 dollops goat cheese
  • Balsamic glaze to top

Instructions

Brush all sides of the peaches lightly with olive oil

Place on the grill until they soften (4-6 minutes on each side)

While the peaches are grilling, compile the salad with the greens, basil and avocado.

When the peaches are done, brush slightly with agave nectar and scoop a dollop of goat cheese into each peach’s center, where the pit used to be.

Top each salad with 2 peach halves, with the gooey goat cheese

Drizzle balsamic glaze along salad, enjoy!

    that sounds pretty fabulous. our peaches never make it into meals… they get gobbled up too fast, but i may have to stash some away for grilling this weekend. :)

      I know, I had to buy peaches for grilling AND peaches to eat. I grilled them that evening, otherwise they might not have stood a chance! Let me know if they make it this weekend :) Thanks for reading and happy 4th!

    This salad looks amazing! I’m so jealous of your summer weather – we are in the middle of winter here in Australia. I love hot summer nights too and can’t wait for ours to come around so I can make a salad like this :)

    WOW! Made this for the family the other day, and it was ridiculous! Never BBQ’d a peach before…have a whole new appreciation for that fruit now.

        Ha, of course! Adds a strong flavor to offset that sweetness…and you just can’t go wrong with goat cheese. You should try it with some toasted walnuts or even some pecans. Adds a nice little crunch to it.
