I know. My second meat recipe! Finally something guys will be okay with eating for dinner. They always say they love the food, but I don’t know if quinoa dishes, stuffed mushrooms and kale salad always cut it for them.
But these caprese chicken breasts are as delicious as it sounds and I can make that next time. Caprese salad is already good enough with mozzarella, basil, tomatoes, and balsamic. But when you layer all that goodness between layers of chicken? You’ve got a pretty darn good meal.
All you need is week 3’s feature ingredient, H-E-B’s Natural Chicken Breasts, spinach, and these caprese ingredients:

To add a little bit of iron and Vitamin K to these guys, I added some sautéed garlic spinach. Layer the spinach on half of each chicken breast.
Then layer tomatoes, mozzarella and basil…
Fold over the chicken and seal with a toothpick. Bake at 400 degrees for about 12-15 minutes. Now you can grab that glass of wine and officially relax for the day. Just wait for the goodness to be done!
When the chicken is done, drizzle it with some salt and pepper, and of course, some reduced balsamic. Dig in!

Caprese Stuffed Chicken
Prep Time: 15 minutes
Cook Time: 15 minutes
Serves: 4 people (4 chicken breasts)
Ingredients (4 servings)
- 4 H-E-B Natural Chicken Breasts
- 2 cups fresh spinach
- 2 medium tomatoes, sliced
- 8 oz. fresh mozzarella, sliced
- 1 cup fresh basil
- Alessi reduced balsamic
Instructions
Pound out chicken breasts with mallet or rolling pin to flatten.
Heat a ½ tsp of olive oil in a pan and wilt the spinach.
Cover a roasting pan with foil and lay the chicken breasts flat.
Add the wilted garlic spinach to one half of each chicken breast.
Layer 2 tomato slices, 2 slices of mozzarella and top with basil.
Fold the other half of the chicken over, toothpick to secure closed.
Bake at 400 degrees for 12-15 minutes, until chicken is cooked through.
When serving, add salt and pepper and drizzle with Alessi reduced balsamic.
