{VOTE NOW!} Caprese Stuffed Chicken

I know. My second meat recipe!  Finally something guys will be okay with eating for dinner.  They always say they love the food, but I don’t know if quinoa dishes, stuffed mushrooms and kale salad always cut it for them.

But these caprese chicken breasts are as delicious as it sounds and I can make that next time.  Caprese salad is already good enough with mozzarella, basil, tomatoes, and balsamic.  But when you layer all that goodness between layers of chicken? You’ve got a pretty darn good meal.

To add a little bit of iron and Vitamin K to these guys, I added some sautéed garlic spinach.  Layer the spinach on half of each chicken breast.Caprese Stuffed Chicken | www.thefreshfind.com 092

Then layer tomatoes, mozzarella and basil…Caprese Stuffed Chicken | www.thefreshfind.com 090

Fold over the chicken and seal with a toothpick.  Bake at 400 degrees for about 12-15 minutes.  Now you can grab that glass of wine and officially relax for the day.  Just wait for the goodness to be done!Caprese Stuffed Chicken | www.thefreshfind.com 089

When the chicken is done, drizzle it with some salt and pepper, and of course, some reduced balsamic.  Dig in!Caprese Stuffed Chicken | www.thefreshfind.com 088 Caprese Stuffed Chicken | www.thefreshfind.com 087
