Chia Seed Overnight Oats

Tomorrow I will be attending my first ATX Food Swap and I am very excited!  This one is put on by Kate Payne from Hip Girl’s Guide to Homemaking, who I got to meet at BlogHerFood in June.

What is a food swap?  It’s one big food bartering party.  Each attendee brings something that they made, and trades it 1 for 1 with an item another attendee made.  By the end of the night, I get to come with home-made goods to try!

Yes, this is pretty much my heaven.

I was trying to decide on what to make… banana bread? Health bars? Veg Chili?  I finally decided to make something that I know is delicious and want more people to know about.  Yep, you guessed it.  Chia seeds!

My friend Lauren (who designed my logo!!) told me I was going to eat too many Chia seeds and turn into a walking Chia pet.  Haha, that’ll be the day.

Y’all seem to love my Chia Seed Pudding post (thanks for all the great feedback!!!), but I decided to switch it up and make these Chia Seed Overnight Oats.

I posted these before, but these are a whole lot prettier :)  This time, I used Vanilla-flavored Greek yogurt, instead of plain yogurt, to give it a nice flavor.  Plus, I got super cute jars to put them in!

By making something with Chia seeds, I get to talk about all the health benefits ALL night.  Yup, all night I get to nerd out about omega 3’s, fiber and protein.  Go ahead and call me weird… I cannot wait.

I love the combination of the chia seeds, oatmeal, yogurt and soy milk.  I know it’s not the prettiest dish, but check out the recipe below and give it a shot.

Chia Seed Overnight Oats

Prep Time: 5 minutes

Cook Time: Sits Overnight

 

Ingredients (1 bowl)

  • 1/2 cup Old Fashioned Oats
  • 1/2 cup light Soy Milk (unflavored)
  • 1/2 cup Greek Yogurt, vanilla
  • 2 tbsp. Chia Seeds
  • Optional: Agave nectar, fruit to top

Instructions

Combine the oats, soy milk, yogurt and chia seeds. Mix well.

Place in the fridge overnight.

Add additional agave nectar or fruit to sweeten, if desired.

Grab and go for a quick breakfast!

    That was a great swap item, Kristin! One of the things I enjoy about the swap is trying something new, and this was a neat way to start the day today!

      I’ve heard of oatmeal in a crock but I’ve never done it! Do you have a recipe on your blog? I’ll have to check your blog and try it out!

    I was just wondering the nutritional value of this, as a breakdown. I love overnight oats & want to try chia. I will be having bariatric surgery soon & this sounds amazing.
