Do you need a vegetarian appetizer or a meatless Monday snack?  These crostini bites only take ten minutes and are delicious.  You only need this Eggplant Garlic Spread from Trader Joe’s.  Go get some immediately.

 Mmmmm, it’s so eggplanty and garlic-y and smokey and mmmmmm!  (Yes, I am eating it right now.) It’s just so good, I want to smother every single food item with this spread.

My goodness, it could make sand taste great.

Eggplant Crostinis Bite_01

You have to try this stuff, it’s crack.  I’m probably building it up (hmph, I tend to do that), but when I love something, I LOVE it.  There’s no ‘Yeah, I love it”.

I’m like… “I’m going to tell every person I pass on the street that this stuff is the s***.” (excuse my language, but no other phrase quite got the point)

Eggplant Basil Crostinis

Prep Time: 10 minutes

 

Ingredients

  • 1 whole wheat baguette or bread
  • Eggplant Garlic Spread- Trader Joe’s
  • 1 bunch basil
  • 1 roasted red bell peppers
  • Goat cheese (or feta)

Instructions

Heat oven to 375 degrees.

Arrange the baguette/bread slices on a cookie sheet, brush with olive oil.

Place in the oven for 10-12 minutes, until browned.

Meanwhile, wash and dry basil, and chop the roasted red bell peppers (I bought the pre-roasted ones from Trader Joe’s)

When the bread is done, remove, and top with basil, a healthy dollop of the eggplant spread, peppers and cheese! (Want to make it vegan? Opt out of the cheese)
