Chia Seed Pudding

Chia seeds are back!  I talk about these a lot and if you haven’t bought them, go buy some this weekend.  Just do it.

This Chia seed pudding recipe is simple, healthy and darn delicious.  There is no reason you shouldn’t try it out.

I love the texture of the chia gel and pudding.  Imagine tapioca pudding but 100 times healthier for you.

There is something about that ooey, gooey texture with the seedy crunch.  You know the seeds you get to bite when you eat raspberries?  I oddly enjoy those seeds, call me weird, but it’s part of why I love that fruit.

These Chia seeds have that same crunch! (hey, it’s the little things in life, right?)

I have been making Chia pudding, oats, gel, yogurt and I am always disappointed at how UGLY they are to the normal person.  (I think they look like super cool, but I’m not everyone)

I tried to make these guys look pretty. I learned about ‘food styling’ during the BlogHer conference and have made it a goal to change up my pictures.  I hope you guys enjoy!

It seems to work so far, because my mom, who isn’t a huge fan of Chia seeds, said “Oh!  That looks yummy!”

Yay!  We’re off to a good start.  What do you think?

I swear by Driscoll’s berries.  I rarely buy any other brand because Driscoll’s strawberries, blueberries, blackberries are so sweet and crispy every. darn. time.  Mmmm! I don’t think I have ever been disappointed.

Anyway… give these Chia babies a shot! You can also put them in banana bread!

Chia Seed Pudding [v] [veg] [gf]

Prep Time: 5 minutes

Cook Time: 4 hours (sitting in fridge)

Keywords: gluten-free vegan vegetarian

 

Ingredients

  • ¼ cup chia seeds
  • 1 cup almond milk (or soy milk)
  • 1 T agave nectar
  • Top with fruit of choice

Instructions

Mix chia seeds and almond milk in a tupperware container.

Wait 5 minutes and mix again, removing any clumps.

Seal container and place in fridge overnight or for 4 hours.

Add agave nectar and fruit of your choice!

      I got them at our home market, but they are Driscoll’s! AND they have them at Whole Foods right on sale, 3 for $10! I just bought more yesterday

    Do you grind the chia seeds like flax seeds or do you just rely on chewing them? I do love flax seeds so I’ll try these!

      Hi Rachel, great question! Chia seeds are actually different from flaxseed in that you can still absorb all the nutritional benefits without having to grind them. For flax, you have to grind it up in order for your body to retain the nutritional benefits, but with Chia, you can eat them in any form! Thank you for reading!

        Wow – I made it with chocolate coconut milk and mmmmm! I love the sort of crunchy-tapioca texture. Next time I’m adding chai spices!

    I’ve been meaning to make this for a while and just made it for the first time yesterday! I didn’t have almond milk on hand so I used a half organic fat free milk and half fat free greek yogurt – for a little more protein and some probiotics :). I added a bit of orange zest too – so good!! I want to make this for breakfast everyday! I had it with some fresh strawberries and a little of my Kashi go lean crunch on top. Very tasty! Will be making this again :)

Good idea with the orange zest, strawberries and Kashi… you’re so gourmet! And yes… chia + probiotic yogurt is the ultimate equation for helping cleanse the intestines, I love it!
