Fudgy Vegan Black Bean Brownies

Hey strangers!  I’m back from another hiatus… sorry about that.  The last few weeks have been just crazy—but crazy in a great and fun way.  The weather in Austin keeps everyone out on the town, no matter what day it is.  I swear, it’s like nobody works here.  Every night there is something going on and it makes it hard to stay in.

But I’m back with some more vegan treats.  After how popular the Vegan Cocoa Chia Energy Bites were, I had to post these black bean brownies.

These are darn good vegan brownies.  I’ve made a few black bean brownies in the past, and these are definitely the best.  Although they look black as tar, they are fudge, moist, and delicious.  They have already passed the test of multiple of my (non vegan) friends.

They are delicious and completely vegan.  They are not overly sweet and are sweetened with Wholesome Sweetener’s Organic Sugar.

They are binded together with a Chia egg.  Hooray (yet again) for Chia!  I love baking with Chia eggs, it makes the goods healthier, vegan friendly, and you can’t even taste the difference.

It’s getting’ hot in Texas so I’ll be making these and throwing on a big scoop of coconut ice cream this week!

Note:  They are very moist, so after a few days, they started to mold.  Store them in an airtight container in the refrigerator to keep them fresher longer!

Fudgy Vegan Black Bean Brownies [veg] [v] [gf]

Prep Time: 15 minutes

Cook Time: 20 minutes

 

Ingredients (12 brownies)

  • 1 15 oz. can black beans, rinsed and drained
  • 1/2 c. sugar
  • 2 Chia eggs (2 Tbsp Chia, 6 Tbsp water) stir and let it sit for 5+ minutes
  • 3/4 cup Cocoa Powder
  • 1/4 c. Coconut oil
  • 2 tsp pure vanilla extract
  • 1 1/2 tsp baking powder
  • 1/8 tsp sea salt

Instructions

Rinse and drain the can of black beans

Make your chia egg and let it sit for 5+ minutes.

In a food processor, combine sugar, cocoa powder, baking powder and salt.

Add in black beans, chia egg, coconut oil and vanilla.

Mix until well combined. You will have a very dark mush. :)

Grease cupcake tins and pour batter into tin.

Top with nuts, coconut or whatever your heart desires!

Bake for 18-20 minutes, or until the tops feel done. They will be fudgy on the inside and do not rise too much.
