Kale and Roasted Pepper Wheat Berry Salad

I have wanted to make wheat berries for such a long time.  A few weeks ago, I discovered Central Market, which has filled the void in my heart of Trader Joe’s.  There is an awesome area of grains, oatmeals, nuts, spices, trail mixes, candies, all in bins and you measure out how much you want and pay by the weight.  That way, you can buy only as much as you want.  It makes it easy to try things too!  Then you can just buy a little and test it out instead of buying a whole box, only to find out you don’t like it.

Wheat Berry Salad

  • 1 cup wheat berries
  • 3 cups water
  • 3 cloves garlic
  • 1/2 onion, chopped
  • 1 tomato
  • 1 c. kale, chopped
  • 4 roasted red peppers
  • 4 sprigs of cilantro (or basil)

Directions:
Contrary to popular belief, you don’t need to soak wheat berries overnight.  (I have done it both ways and they taste the same!)  All you need to do is cook 1 cup of wheat berries with 3 cups of water.  Bring to a boil then let simmer for an hour.  They should be pretty chewy and somewhat firm, but not crunchy.  Drain the wheat berries after fully cooked.

While the wheat berries are cooking, chop up the garlic, onion, tomato, kale and peppers.  Heat the garlic until browned and add the onions until slightly brown.  Throw in the rest of the veggies and stir fry until cooked.

Add the veggie mix to the wheat berries.

Season how you like!  I chose to go with some salt, pepper, cumin and balsamic vinegar.  These things are hearty… like, really hearty.  They are so nutty, chewy, grainy and just fantastic. Makes for a simple meal!
