Vegan Cocoa-Chia Energy Bites

I feel like I just changed my life.  These little bites were un-freaking-believable.   They are made only with dates, almonds, coconut, chia, and cocoa powder.  It fulfills my sweet craving while being vegan, gluten-free and raw!  Crazy, I know.

Plus, they are so easy to make.  All you need is a food processor to blend everything together.  And a pair of clean hands to shape the balls and roll them in shredded coconut.

I store mine in the refrigerator, but you can also store them in the freezer to keep them fresh.  At my house, they get eaten too quick for the freezer.  But if you have self control or made a big batch, you can keep them in there.  They won’t freeze either, you can take them straight out and pop them in your mouth.

And they have CHIA!

I even measured out the nutritional information.  Most the calories and fat come from the almonds (all healthy fat, of course), but most of the protein is from the almonds.  This recipe made 28 quarter-size balls.  Each ball has 51 calories,  1.4g protein, 3.1g fat, 1.1g fiber, and .3g sugar.

These are the perfect snacks for a bike ride, a picnic, or a pool day.  They also make for great pre-work out energy with the dates and chia.  I hope you like them!  They are now in my permanent recipe book.

Vegan Cocoa-Chia Energy Bites [veg] [v] [gf]

Prep Time: 50 min (30 min for soaking dat

Ingredients (28 quarter size bites)

  • 18 dates, soaked for 30 min
  • 1 c. almonds (use raw, for raw treats)
  • 1/4 c. coconut flakes (unsweetened)
  • 1/4 c. coconut (shredded)
  • 1/4 c. chia seeds
  • 1/4 c. cocoa powder
  • 1 T. cinnamon
  • 1 tsp. vanilla

Instructions

Place almonds, coconut flakes, chia seeds, cocoa powder and cinnamon in a food process. Process until almonds are chopped finely.

Add dates and process until well combined. (It will be pretty thick)

With clean hands :) roll the mixture into small balls.

Place the 1/4 c shredded coconut on a flat dish/bowl and roll each ball until covered.

Place in frige or freezer for storage. (if you have any!)

    I’ll be making these very soon, they look really yummy. Question: Coconut listed as 1/4 C. does half that amount go into the mixture and the other half to coat the balls?

      Hi Robin, thank you for commenting! I have adjusted the recipe, sorry about that. It is 1/4 c. coconut flakes in the mixture, and rolls the bites in 1/4 c. shredded coconut :) Enjoy!
