Recently, I made my very first whole wheat pizza crust! I love the pre-made one from Trader Joe’s, but I can FINALLY check off on my to do list, “make your own pizza dough”.
My roommate has a great recipe for a regular pizza crust, so we decided to make one regular pizza, and one whole wheat.
Making the dough was so easy! You just need to plan ahead.
I was inspired by this recipe from Tablespoon and loved it. I started with this little ball…
And after a few hours, it rose to this size! I halved it, and made about an 8 inch pizza.
The crust is heavier and more dense than typical pizza dough. It may not be for all people, but I loved the dense, nutty and grainy dough.
Before baking, I caramelized these onions, bringing out their natural sweetness. I topped the dough with the onions and mushrooms.
I baked the pizza first, and then laid on the goat cheese and cilantro.
The goat cheese was deliciously melting right before my eyes. As I was leaning over and taking pictures, couldn’t believe how good this pizza smelled!
I loved the toppings on this pizza, so if you are not a ‘whole-wheat cruster’ you can still use this recipe. But for me, the combination was perfect!
Annnnnd I took a bite right then and there. YUM!
Whole Wheat Pizza w/ Caramelized Onions and Goat Cheese [veg]
Prep Time: 20 minutes
Cook Time: 15 minutes
Ingredients (1- 8″ pizza)
For the dough
- 2 cups whole wheat flour
- 1 package dry active yeast
- 1/2 tsp salt
- 1 cup warm water
- 1 tbsp EVOO
- 1.5 tbsp brown sugar
For the toppings
- 1 tsp EVOO
- 1 onion, sliced
- 10-12 mushrooms, sliced
- Goat cheese (opt)
- Cilantro (opt)
Instructions
For the dough
In a small bowl, combine warm water and yeast.
Stir and let it sit for 5 minutes. It should get foamy, if it is not, the yeast might be expired.
In a large bowl, combine flour, salt and sugar.
Add the yeast mixture and olive oil to the flour mixture.
Knead dough by hand for about 5 minutes.
Cover dough lightly in plastic wrap.
Let dough sit for 75-90 minutes, until risen.
Punch down dough, roll onto pan.
Top with toppings!
For the toppings
Sautee the onions in a pan with olive oil until cooked well (I like to get my a little browned)
When onions are 4 minutes from being done, toss in mushrooms. Stir until mushrooms are cooked through.
When pizza dough is ready, top the dough with the onions and mushrooms.
Bake in oven at 375 degrees for 10-15 minutes, or until desired crispiness.
Top with goat cheese and cilantro…and serve!
