Kale Veggie Scramble
Ingredients
- 1 egg
- 1 egg white
- 3/4 c. chopped kale
- 1/4 c. chopped onions
- 1/4 c. chopped bell pepper
- 1/2 tsp coconut oil
- Avocado for topping
Instructions
- Heat coconut oil in a pan
- Add onions, cook for 1-2 minutes
- Add bell peppers and kale
- Once the kale is a bright green, lower the heat to medium
- Add the egg and egg white
- Constantly move the eggs around to get a perfect scramble!
