I don’t know how the weather is by you, but it is HOT here in Texas. Last year, I feel like I was riding my bike around with no problem. This year I am melting. I don’t know what it is, but I’ve become a complete wuss.
And all I want is these COLD margs. I blended up these refreshing Skinny Watermelon Mint Margaritas and they are amazing for this summer heat.
And who doesn’t love watermelon? It’s so refreshing and juicy and just amazing. What I don’t love about watermelon… is carrying it up three floors to my apartment. In 100 degrees. Oof.
But it was worth it. I had a massive watermelon which allowed me to enjoy some fresh, and also freeze for margs!
And they will definitely be made this Fourth of July weekend!
These skinny margs have simple ingredients. All sugar is naturally from the watermelon and there is a tablespoon of Chia seeds!
A few of my other girlfriends whipped up their own healthy(ish) cocktails for this weekend. Therefore, you can still enjoy yourself this holiday!

What is your favorite summer drink?
Skinny Watermelon Mint Margaritas
Ingredients
- 3 cups frozen watermelon
- 4 oz tequila about 1/2 cup
- 2 oz lime juice or 4 tbsp
- 1/2 c. coconut water
- 1 tbsp Chia seeds
- 20 mint leaves
- Salt for rim
Instructions
- Rub lime juice along rim of glass. Dip in salt.
- Add frozen watermelon, tequila, lime juice, coconut water, mint and Chia seeds to blender.
- Blend until smooth.
- Serve in salt-rimmed glasses!
